Super Bowl Snacks Lightened Up

You can’t mention the NFL lately without mention of deflated footballs.  As we gear up for Super Bowl XLIX, footballs aren’t the only things that get inflated.

 

Roughly 11.2 million pounds of potato chips, 8.2 million pounds of tortilla chips, 3.8 million pounds of popcorn, and 2.5 million pounds of nuts—and the list goes on. Altogether, we’ll eat approximately 30 million pounds of snacks, according to the Calorie Control Council, a trade group representing the low-fat and sugar-free food and beverage industries.

 

The council projects that the average Super Bowl watcher will scarf down 1,200 calories and 50 grams of fat in snacks alone. (source)

 

With these lightened up versions of some of your favorite snacks, you can have your cheese sticks and eat them too!  I managed to successfully create a lightened up sampler platter of mozzerella sticks, pizza bites, and chicken nuggets that will fly off the trays at your superbowl party!

Cheese Sticks

I hit a winner with these baked Mozzerella Sticks!

 

Ingredients:

1 package of light string cheese (I used the store brand)

1c. Italian breadcrumbs (or just add italian seasoning to plain bread crumbs)

1 egg – beaten (I used a product called egg replacer because I have freaky allergies)

 

Preheat oven to 450 degrees.

 

Cut string cheese sticks in half.  Dip into the egg mixture first and then roll in the bread crumbs.

 

Place onto a parchment lined baking sheet and spray with olive oil.  (I used the new Misto I got for Christmas but cooking spray will work too)

 

Bake for 8-10 minutes.

 

*Make sure to let them cool before moving to a serving tray.  If you move them too soon, they will be a cheesy mess!

 

 

Baby Portabello Pizza Bites

I hit a winner with this version of your favorite mini bagel pizzas.

 

Ingredients:

16 oz. Baby bellas

Shredded Mozzerella Cheese

Turkey Pepperoni

 

Remove stems and scoop out gills of mushrooms

 

Stuff with cheese and top with pepperoni (diced)and bake on a parchment lined sheet at 450 degrees for 20 minutes

 

Serve with your favorite Maranara dipping sauce.

 

 

Chicken Nuggets

These can be served with any dipping sauce of your choosing.  I think they would also be good tossed in buffalo sauce so you can get your wing fix on without the frying!

 

Ingredients:

1 pound chicken tenders (cut into nugget size pieces)

1c. Italian breadcrumbs (or just add italian seasoning to plain bread crumbs)

Preheat oven to 450 degrees.

 

Dip chicken into the egg mixture first and then roll in the bread crumbs.

RAD December – Curried Chicken Salad

Who doesn’t like chicken salad?  Ok, there are probably a few out there but for the rest of us, chicken salad usually means creamy goodness that is loaded with fat.  Luckily, thanks to the substitution of greek yogurt, this recipe is a lower calorie treat with all the creamy goodness of its full fat cousin!

Curried Chicken Salad

1 c. shreded chicken breast ( you can either use fresh chicken, or a large can)

1/2 c. low fat greek yogurt

1 tbs. curry powder

Combine the ingredients and allow to sit in the fridge for at least half an hour (overnight is better).

Serve on top of spring mix with grapes and walnuts

…or with crackers

…or tortilla chips

…really, the possibilities are endless!
