Tis the season for all things pumpkin and thanks to a huge pumpkin that I bought early in October, I have pumpkin puree out the wazoo!
This giant pumpkin made 22 cups of pumpkin puree!
Pumpkin and Oatmeal are two of my favorite foods and these mini oatmeal muffins make a great grab and go breakfast on busy mornings or a tasty after school snack. I sometimes even keep a couple in my purse for those moments when I am out shopping and am suddenly starving.
Baked Pumpkin Oatmeal Minis
In a bowl, combine:
1 c. oats
1/2 c. pumpkin puree (canned or fresth…either is fine)
1/2 c. milk
2 tbs. brown sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
Mix together and spoon into a sprayed 12 cup muffin pan.
Bake at 350 for 15-20 minutes (until set).
